Laboratory "Brewing barley and malt"

  • studies the influence of the raw materials on the technological processes, the quality and the safety of malt;
  • develops and perfects the technologies for production of malts and special types of malt;
  • carries out testing of the economic and brewing-technological characteristics of new varieties brewing barley, included in the agro-ecological network of European Brewery Convention;
  • studies the economic and brewing-technological characteristics of new Bulgarian varieties brewing barley;
  • carries out analyses of brewing barley, adjuncts and malt.

Laboratory "Technology of beer and beverages"

  • develops and implements technologies for production of new beer, nonalcoholic and spirituous beverages brands;
  • develops and implements new technical-technological solutions in the brewing and beverage industry;
  • studies the influence of the raw materials on the technological processes, the quality and the safety of beer, nonalcoholic and spirituous beverages;
  • investigates and implements new adjuncts, hop products, filtration and stabilizing agents and packing;
  • carries out scientific and scientific-applied studies for the development of new functional drinks;
  • develops and implements technologies for the use of the waste products from the malt, brewing and drinks industry;
  • carries out analysis of water for brewing, hops and hops products, adjuncts, wort, enzyme preparations, filtration and stabilizing agents and beer;
    develops and implements new methods of analysis of brewing raw materials, intermediary products, beer and beverages.

Laboratory "Microbiology of beer and beverages"

  • carries out studies, assessment and maintaining of a collection of brewing yeast strains;
  • provides pure cultures brewing yeast strains to the brewing industry;
  • carries out microbiological analysis of brewing raw materials, beer and soft drinks;
  • renders microbiological service to the brewing industry;
  • carries out microbiological analyses of foods, bioproducts, biopreparations according to the standard norms and requirements.

 

Education

The ICFT is granted an institutional accreditation for Ph.D. education for 4 scientific subjects: Technology of fish and meat products, Technology of alcoholic and non-alcoholic drinks, Technology of biologically active substances and Technology of processing and storage of grain, grain products and mixtures.
